Summer is when bell peppers are at their best. Your local supermarket will have plenty on hand.\u00a0 This recipe calls for red, green, and yellow peppers.\u00a0 Yes, you can use all one kind if you prefer. I like the variety and the different color peppers add a bit of nice color to the presentation of the focaccia.\u00a0 Also, each pepper has its unique flavor, which adds to the taste of this focaccia bread.<\/p><p><a href=\"https:\/\/www.castellocheese.com\/en-us\/cheese-types\/semi-hard-cheese\/fontina-cheese\/\">Fontina<\/a>\u00a0is a mild-flavored semi-soft cheese from the Aosta Valley region of northern Italy.\u00a0 It melts beautifully!\u00a0 This cheese pairs nicely with the peppers\u2019 flavor and helps make for a nice melted cheesy crust on the exterior of the focaccia bread.\u00a0 If you do not like fontina cheese you can easily substitute it with mild provolone, gruyere, or gouda.\u00a0 I suggest you stick with the fontina, It is perfect for this recipe.<\/p><p>Also, this recipe is divided into six equal portions of dough. This way each one of your guests can enjoy their very own mini-focaccia. Or, you can bake the entire dough without dividing it and have one big focaccia to slice and serve. The mini version is a nice touch and it is a great way to impress your guests. Remember that in cooking it\u2019s the little personal touches that go a long way and create lasting memories.<\/p><div id=\"print-me\"><h2>Fontina Cheese and Bell Peppers Focaccia<\/h2><p>(serves six people)<\/p><h3>Ingredients<\/h3><ul><li>1 1\/2 cups hot water (100\u00b0F)<\/li><li>1\/2 cup vegetable oil<\/li><li>3 tablespoons vegetable oil to brush the focaccia before baking.<\/li><li>1 tablespoon active dry yeast<\/li><li>1 tablespoon sugar<\/li><li>5 cups flour<\/li><li>1 teaspoon salt<\/li><li>1 yellow pepper<\/li><li>1 red pepper<\/li><li>2 green peppers<\/li><li>2 cups of grated fontina cheese<\/li><\/ul><\/div><h3>To make the focaccia dough<\/h3><ul><li>Mix the warm water, active dry yeast, and granulated sugar in a large bowl.<\/li><li>Cover it and let it stand in a draft-free warm place in your kitchen for about 10 minutes.<\/li><\/ul><p><strong>Tip:<\/strong>\u00a0The mixture will become frothy and slightly bubbly on top.<\/p><ul><li>Now clean and cut the peppers.<\/li><li>Remember to remove the thin inner part of the pepper. Then cut the peppers into small dice.<\/li><li>Reserve a half cup of the mixed peppers for garnish.<\/li><li>Once the yeast has proofed add the flour, salt, peppers, and vegetable oil.<\/li><li>Knead it on a floured work surface until you get a soft and smooth dough.<\/li><li>Pour a teaspoon of vegetable oil onto the dough and spread it evenly over the surface.<\/li><li>Place the dough back in the bowl.
